Lucky - St. Patricks Day Shirt - Craft






Used Bleach Pen. This was my first experience using a bleach pen with freezer paper stencil. It bled really bad so I had corrected the shirt by outlining the work LUCKY and the SHAMROCK with green puffy paint.

Weight Watchers Tex-Mex Rice and Bean Casserole




Serves 6

(Weight Watchers 5 points)

Ingredients
1 spray(s) cooking spray
1 cup(s) canned yellow corn, drained, or frozen, thawed corn kernels
1 Tbsp canned green chili peppers, chopped, mild or hot
15 oz canned pinto beans, rinsed and drained
1 cup(s) cooked brown rice, fresh or day old
3/4 cup(s) shredded reduced-fat Mexican-style cheese
3/4 cup(s) fat-free sour cream
1/4 tsp chili powder
1/4 tsp table salt
1/8 tsp black pepper
2 Tbsp uncooked scallion(s), chopped (dark green part only)
2 Tbsp shredded reduced-fat Mexican-style cheese

Instructions
Preheat oven to 350ºF. Coat a 2-quart glass baking dish with cooking spray.

In a large bowl, combine corn, chilies, beans, rice, 3/4 cup of cheese, sour cream, chili powder, salt and pepper; stir in scallions.

Spoon mixture into prepared baking dish and bake for 30 minutes. Remove from oven and sprinkle with remaining 2 tablespoons of cheese. Return to oven and bake until cheese melts and casserole is slightly bubbly, about 10 minutes more. Let stand for 5 minutes to firm up before slicing into 6 pieces. Yields 1 piece per serving.

Notes
Change the beans or cheese to your liking: white or black beans, reduced-fat cheddar or Monterey Jack cheeses all work well.

If you want to brown the cheese more, place the dish (make sure it's broiler safe) under the broiler for a minute or two.

St Patricks Day Shamrock Cookies






Ingredients:
1 cup(s) sugar
1/2 cup(s) reduced-calorie margarine, at room temperature
1 large egg(s), lightly beaten
1/4 cup(s) light corn syrup
2 Tbsp fresh lemon juice
1 Tbsp vanilla extract
2 3/4 cup(s) all-purpose flour
3/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp table salt
1/2 tsp ground cardamom, if desired
2 large egg white(s)
2 cup(s) powdered sugar, lightly packed


Instructions
In mixer on medium, beat sugar and margarine together until crumbly. Add 1 egg, corn syrup, lemon juice and vanilla; beat until smooth and pale in color.

In a medium bowl, stir together flour, baking powder, baking soda, salt and cardamom. Slowly beat flour mixture into margarine mixture until blended. Divide dough into four equal parts and flatten each quarter to form a round. Wrap each in plastic; refrigerate 30 minutes or overnight.

Preheat oven to 350°F.

Lightly spray baking sheet(s) with cooking spray. On a lightly floured board roll out one round to 1/4-1/8 inch thickness. With a lightly floured Christmas tree cookie cutter (about 2 inches tall), cut out cookies and transfer them, about 2 inches apart, to baking sheet(s); repeat with remaining dough.

Bake until golden brown on bottom, 5 to 9 minutes. Remove from the oven; cool completely.

For Royal Icing, in a large bowl whip egg whites and powdered sugar at low speed until sugar is moistened. Beat at high speed until glossy and stiff peaks form when beaters are lifted, about 6 minutes. Divide icing depending on how many colors you want to use. Add food coloring to achieve desired tint. To decorate cookies place icing in a small plastic bag; snip a tiny hole off one corner of the bag

Healthy Homemade Pizza on a Whole Wheat Tortilla



Ingredients:

1 Whole Wheat Tortilla
2 tablespoons Pizza Sauce
1 Green and Yellow Pepper
1 cup Mushrooms
1 cup low fat Mozzerella
1/2 onion
Garlic to taste
Oregano to taste

Layout Tortilla. Add Pizza Sauce, spoon it around to cover tortilla.
Add cut up slices of Peppers and Mushrooms. Top with Mozzerella

350 degrees for 20 minutes

There is seriously no AFTER BAKED picture because we ate it before I realized I hadn't taken a picture of it, but you get the idea!

Science Exchange - Spaghetti and Marshmallower Tower

Maya was more interested in eating the marshmallows (her favorite treat).
I actually got in on this one (see the smaller one)
The kids found it easier to work with the spaghetti if it was broken in 1/2.
Aiden was patient as he created his tower and asked me for help when needed.

Science Exchange - Blow Up A Balloon With Yeast

A packet of yeast (available in the grocery store)
A small, clean, clear, plastic soda bottle (16 oz. or smaller)
1 teaspoon of sugar
Some warm water
A small balloon
